Bibimbap is a Korean dish that typically consists of a bowl of rice topped with various sautéed and seasoned vegetables, sliced meat (often beef), an egg, and gochujang, a sweet and spicy chili paste. This is by no means the traditional method of making it, but it’s fast and makes for an easy weeknight meal. In this microwaved adaptation, beef and mushrooms are cooked in a savory and slightly spicy sauce that’s perfect for serving over fluffy steamed rice. Add steamed spinach or vegetables, an egg, kimchi, or pickled veggies to make it a meal.
